Chickpea & Spinach Stir Fry

Ingredients

Ingredients (Serves 2):

  • 1.5 cups cooked chickpeas
  • 2 cups fresh spinach
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Juice of half a lemon
  • Salt and pepper, to taste
Instructions

Instructions:

  • Heat olive oil in a pan over medium heat.
  • Add onions and garlic; sauté until translucent.
  • Add chickpeas; cook for 5 minutes, stirring occasionally.
  • Add spinach, stir until wilted (about 2 minutes).
  • Remove from heat; squeeze lemon juice over the top.
  • Season with salt and pepper and serve warm.
