Chickpea & Spinach Stir Fry

- 1.5 cups cooked chickpeas
- 2 cups fresh spinach
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Juice of half a lemon
- Salt and pepper, to taste
Instructions
Instructions:
- Heat olive oil in a pan over medium heat.
- Add onions and garlic; sauté until translucent.
- Add chickpeas; cook for 5 minutes, stirring occasionally.
- Add spinach, stir until wilted (about 2 minutes).
- Remove from heat; squeeze lemon juice over the top.
- Season with salt and pepper and serve warm.
