Oats Vegetable Upma

Ingredients

Ingredients (Serves 2):

1 cup rolled oats
1/2 cup carrots and beans (finely chopped)
1/4 cup peas
1 small onion, chopped
1 tsp mustard seeds
1 tsp urad dal (optional)
1/2 tsp grated ginger
1 tsp oil
Salt and pepper to taste
2 cups water
Lemon juice & coriander for garnish

Instructions

Instructions:

Dry roast oats for 2–3 minutes until lightly golden. Keep aside.
Heat oil in a pan, add mustard seeds and urad dal.
Add ginger and onions, sauté till translucent.
Add all vegetables, sauté 3–4 mins.
Add water, salt, bring to boil.
Add oats slowly while stirring. Cook covered on low flame till soft and fluffy (~5 mins).
Squeeze lemon and garnish with coriander.

Rolled oats (1/2 cup): 150 kcal
Veggies, oil, spices: ~70 kcal
