Tofu Scramble with Veggies

Ingredients

Ingredients (Serves 2):

  • 200g firm tofu, crumbled
  • 1 bell pepper, diced
  • ½ cup mushrooms, sliced
  • ½ onion, diced
  • 1 tbsp olive oil
  • 1 tsp turmeric
  • 2 tbsp nutritional yeast
  • Salt and pepper, to taste
Instructions

Instructions:

  • Heat olive oil in a pan over medium heat.
  • Sauté onions, bell pepper, and mushrooms until soft.
  • Add crumbled tofu and turmeric; cook 5 minutes, stirring frequently.
  • Stir in nutritional yeast; season with salt and pepper.
  • Cook an additional 2-3 minutes and serve warm.
